I’m Addicted to Falafel and Veggie Burgers, So I Combined Them

Healthy Falafel Burgers

Veggie burgers are my new favorite junk foods now that I’m on a plant-based diet. Falafel are one of my go-to snacks now, too. If you think I’m speaking a foreign language, I kind of am, but they’re nothing weird. They’re just chickpeas that are ground, formed into balls, and fried. Sounds good? It is. Anyway, I was in my mad-scientist mode last weekend and decided to try making falafel into burgers. I succeeded, and keep reading for the recipe!

Falafel Burgers
Servings: 8
Prep Time: 30 minutes
Cook time: 5 minutes

Ingredients
2 cups canned chickpeas, drained
2 slices brown bread, powdered in food processor
5 cloves garlic, sliced
½ onion, shredded
½ C. parsley, shredded
½ C. cilantro, shredded
1 tsp. sesame seeds
1 tsp. cumin
1 tsp. cayenne pepper
Salt
pepper
2 tsp. baking soda
oil, for frying
8 onion rolls, halved
1 tomato, sliced
1 onion, sliced
pickle slices

Directions

In the bowl of a food processor, blend the chickpeas and the garlic, onion, parsley, cilantro, garlic, and bread crumbs.

Empty that mixture into a bowl. Add the sesame seeds, cumin, cayenne pepper, salt, black pepper, and baking soda. Mix well using your clean hands or a wooden spoon. Cover the mixture

Blend chickpeas in a food processor together with the bread crumbs, garlic, onion, parsley and cilantro.

Transfer the mixture to a bowl, add the sesame seeds, cumin, cayenne, salt, pepper and baking soda, mixing well. Cover and leave mixture to rest for 30 minutes or so.

After the mixture has rested and solidified more, form the batter into about eight patties. Make them about the size of a beef hamburger. Try for about 1/2 to 3/4 of an inch. Too thin, and the batter will separate in the hot oil. Too thick, and you’ll burn one side by the time it’s cooked enough to flip. Allow the patties to rest for about five minutes before frying.

Heat the oil to 350 degrees and fry the falafel patties until they are golden brown, flipping halfway through.

Place the cooked burgers on onion rolls and top with tzatziki sauce, sliced tomato and onion and pickles. Serve immediately.
